Spanish Chorizo PEI Mussels


3 lbs fresh PEI Mussels
3 tbsp. Butter
4 Garlic Cloves, minced
4 Links Spanish Chorizo, pre-cooked with casings removed and crumbled
1/2 Red Onion, thinly sliced
1/2 Green Bell Pepper, thinly sliced
1/2 Red Bell Pepper, thinly sliced
1 Cup White Wine Or Sparkling Wine
1 tsp. Fine Sea Salt
1/2 tsp. Ground Black Pepper
Crusty Bread For Serving, Optional


  1. Rinse fresh PEI Mussels under running water. Tap any mussels that are still open and discard any that do not close after being tapped and rinsed. Set aside.
  2. Combine all ingredients except mussels and bread in a large, high sided pot. Bring to a boil then reduce heat.
  3. Add PEI mussels. Cover and let steam for 5-7 minutes, until mussels are open.
  4. Pour into a large serving bowl and enjoy with fresh crusty bread!
