Half-Shell Delight


1.5 lb (750 g) fresh PEI Mussels (approx 36 mussels)
1⁄4 cup (60 mL) lemon juice
2 Tbsp (30 mL) green onions, finely chopped
1 clove garlic, crushed
2 Tbsp (30 mL) parsley, finely chopped
2 cup (500 mL) bread crumbs, fresh, finely chopped
1⁄2 tsp (2.5 mL) salt
1⁄8 tsp (0.125 mL) pepper
1⁄4 cup (60 mL) butter, melted
1⁄2 cup (125 mL) water


  1. Rinse fresh PEI Mussels under tap water. Tap any mussels that are still open and discard any that do not close after being tapped and rinsed. Set aside.
  2. Simmer mussels with water in a covered pot until they open. Strain and remove top half of the mussel shell. Discard any mussels that do not open. 
  3. Sprinkle lemon juice over each mussel
  4. Mix remaining ingredients. 
  5. Cover each with about 1 1/2 tsp of the bread crumbs mixture.
  6. Broil 5-7 minutes
