2 lb (1 kg) fresh PEI Mussels, in shell 1/2 cup (125 mL) melted butter 8 lemon wedges
Method
Rinse fresh PEI Mussels under tap water. Tap any mussels that are still open and discard any that do not close after being tapped and rinsed. Set aside.
Arrange grill 4-5 inches (10-12 cm) above hot coals.
Place fresh PEI Mussels on the grill, close the cover and cook until the shells open – about 4-5 minutes.
Serve at once with melted butter and lemon wedges.
