2 lb (1 kg) fresh PEI Mussels, in shell 1/4 cup (60 mL) of water 1 tsp (5 mL) thyme 1 Tbsp (15 mL) parsley, chopped 1 lemon, thinly sliced
Method
Rinse fresh PEI Mussels under tap water. Tap any mussels that are still open and discard any that do not close after being tapped and rinsed. Set aside.
Place in large pot, add water, cover and steam until the shells open (5-7 minutes).
Drain broth into a saucepan, add thyme and parsley, cover and simmer for 10 minutes. Place fresh PEI Mussels and lemon slices in a bowl and pour in the broth mixture.
