Blue Mussel Grill

2 lb (1 kg) fresh PEI Mussels, in shell
1/2 cup (125 mL) melted butter
8 lemon wedges
- Rinse fresh PEI Mussels under tap water. Tap any mussels that are still open and discard any that do not close after being tapped and rinsed. Set aside.
- Arrange grill 4-5 inches (10-12 cm) above hot coals.
- Place fresh PEI Mussels on the grill, close the cover and cook until the shells open – about 4-5 minutes.
- Serve at once with melted butter and lemon wedges.
