Herbed Steamed Mussels

Ingredients
2 lb (1 kg) fresh PEI Mussels, in shell
1/4 cup (60 mL) of water
1 tsp (5 mL) thyme
1 Tbsp (15 mL) parsley, chopped
1 lemon, thinly sliced
Method
- Rinse fresh PEI Mussels under tap water. Tap any mussels that are still open and discard any that do not close after being tapped and rinsed. Set aside.
- Place in large pot, add water, cover and steam until the shells open (5-7 minutes).
- Drain broth into a saucepan, add thyme and parsley, cover and simmer for 10 minutes. Place fresh PEI Mussels and lemon slices in a bowl and pour in the broth mixture.
