Spanish Chorizo PEI Mussels

3 lbs fresh PEI Mussels
3 tbsp. Butter
4 Garlic Cloves, minced
4 Links Spanish Chorizo, pre-cooked with casings removed and crumbled
1/2 Red Onion, thinly sliced
1/2 Green Bell Pepper, thinly sliced
1/2 Red Bell Pepper, thinly sliced
1 Cup White Wine Or Sparkling Wine
1 tsp. Fine Sea Salt
1/2 tsp. Ground Black Pepper
Crusty Bread For Serving, Optional
- Rinse fresh PEI Mussels under running water. Tap any mussels that are still open and discard any that do not close after being tapped and rinsed. Set aside.
- Combine all ingredients except mussels and bread in a large, high sided pot. Bring to a boil then reduce heat.
- Add PEI mussels. Cover and let steam for 5-7 minutes, until mussels are open.
- Pour into a large serving bowl and enjoy with fresh crusty bread!
